JoieFarm Quotidien Brut is a sparkling wine from the Okanagan Valley in British Columbia, Canada. The name "Quotidien," meaning "daily ration," reflects the winery's inspiration to create an accessible, everyday sparkling wine.

Blend Composition:

• Chardonnay: 48%

• Riesling: 39%

• Viognier: 13%

Vinification:

Each varietal is harvested and pressed separately, with a 48-hour settling period in tanks before racking off heavy lees. The Chardonnay undergoes fermentation in both neutral oak and stainless steel, while the Riesling and Viognier are fermented entirely in stainless steel. Different commercial yeasts are selected to enhance the specific aromatics of each varietal. Post-fermentation, the wines age on fine lees for four months before blending and carbonation.
